My Signature Easy Lunch:


About a year ago I made a post on a basic (but delicious) Italian quesadilla- one that I eat at least twice a week. The original post is here. The ingredients listed are:

  • Prosciutto
  • Shredded Parmesan Cheese
  • Shredded Six Cheese Italian Blend (Most grocery stores sell some type of this bagged goodness. We use different brands all the time)
  • Whole Wheat Tortillas
  • (some nonstick spray)

And this alone is an amazing quesadilla, don’t get me wrong, but over the past year I’ve learned how to take this dish to a whole new level.

Here is the secret:

Herb and Garlic Goat Cheese. It adds a level of creaminess and a level of depth with the herbs and garlic.

Quesadilla’s are interesting because we think of them in a very set way. In reality there are a ton of options! While my favorite is Italian, there are also pizza quesadillas (which can get really extreme when you start playing with topics), and I once made a teriyaki quesadilla. And the best part? They are quick, easy, and simple
